An experienced private chef is required for a large private residence in Monaco with four permanent residents.  We are looking for a private chef to manage all food operations.  Experience in high-level households is required.   Candidates should have an eye for detail, be able to create fine dishes and present them like paintings on a plate, love to experiment, create recipes and standards that will serve as guidelines for the kitchen staff to follow.   The chef will work in coordination with the butler to ensure the highest level of food service.  

Duties will include

  • Management of the kitchen operation for a household of four people
  • Food product management: locating best products and providers according to the needs of the employers, storage of dry, fresh and frozen food, ordering of food and kitchen supplies in coordination with the butler
  • Managing a staff of four; scheduling, work allocation, supervision, training
  • Verification of all operational and hygiene standards and their implementation
  • Creating menus for one adult and two children, and occasional private events
  • Food preparation three times per day, seven days per week, for 3 different people (one adult and two children) and simple staff food preparation for a staff of about 20. The Chef will need to organise the time of the cooks, the supplies, preparations and materials in such a way that the employer does not feel the absence of the chef
  • Travel to a separate location in Courchevel for the winter season


Requirements

  • Minimum 2 years of operational experience as a chef in a high-paced household or on private or charter yachts
  • Thorough knowledge of European cuisine (French & South Europe) as well as world kitchen
  • Very good knowledge and adherence to HACCP norms

Sourcing local and seasonal products, working in symbiosis with the gardeners on organizing the vegetable garden, collecting fresh eggs from the chicken coop, organizing suppliers list, working together with the household team in the smooth running of the house.

Ultimately, a top-notch Personal Chef should be able to handle criticism from the Family as well as demonstrate exceptional communication, time management, and dedicated service skills at all times.

Responsibilities will include

  • Weekly meeting with the owner and/or manager to determine their meal plans, preferences, specifications, food allergies, and dietary restrictions.
  • Preparing customized holistic meal plans based on their preferences, specifications, and dietary needs.
  • Shopping for meal ingredients as well as necessary kitchen tools and equipment.
  • Inspecting meal ingredients before making purchases to ensure that they are of the highest quality.
  • Preparing meals in the Family’s kitchens in accordance with food health and safety regulations.
  • Cleaning and sanitizing work areas before and after meal preparation. Taking care of all the Kitchen cleaning including washing up, pots and pans, etc.
  • Appropriately storing ingredients and food, packaging and labeling prepared meals that are to be consumed at a later date.
  • Working together with the household team(s) in the smooth running of the house(s)

Beautiful family estate of approx. 40 acres, in a suburban setting close to the sea and with easy access to Amsterdam. This property is the family estate, of owners, with multiple homes and who currently only visit the property alternate weekends. They are an informal couple and like their privacy when visiting the property. The principal’s adult children and their families occasionally visit using the guest cottage some weekends and holidays. The property is newly refurbished and has full security systems and cameras in place.

The housekeeper will take care of the interior of the main house and a small guest house, cleaning, dealing with laundry and generally overseeing the day-to-day housekeeping duties. You will need to have previous experience of antiques, fine fabrics, and precious items. When the owners are in residence, some light cooking will be required ideally Mediterranean and Asian in style. You will need to be able to run errands, shop for fresh produce and work alongside the lady of the house to ensure that any guests are well catered for.

Partner will spend approx. 70% in the gardens and 30% in the house, assisting with care of the gardens alongside the full-time head gardener and part time assistant. You do not need to be a qualified gardener, but you must enjoy working outside in all weathers. There are formal and informal areas of woodland and gardens comprising of flower beds, lawns, topiary and rose gardens and vegetables are also grown on the estate. In house you will assist the housekeeper with any high-level cleaning, undertake any basic repairs and monitor the coming and going of any contractors.

There are numerous external contractors who take care of the swimming pool and tennis court, so you will need to have good communication skills and be able to liaise with them.

Security is extremely important, there are full security cameras, and you will need to be very security aware.

  • Managing the day-today running of the property, delivering the highest standard of service to the principals.
  • Maintenance of the interior and exterior of the property according to the maintenance schedule. When necessary, liaise with third parties.
  • Liaise with the Family Office, the Principals, kitchen and gardening team, as well as security team.
  • Currently extensive renovations are being caried out. Liaising with architect and building team will be necessary during this time.
  • Security of the property, visitor registration off season.
  • To carry out any other duties that may be reasonably requested by the Principal and the Family Office.
  • Manage (season) staff including hiring, training, developing, and disciplinary measures.
  • Ensure that the day-to-day operations are well organised, efficiently run and impeccably maintained.
  • Maintenance of all technical and mechanical systems such as A/C, security, water & wastewater treatment, vehicles & equipment and swimming pool care.
  • Ensure all household equipment including lighting and AV systems are in sound working order – thorough check to be carried out well in advance of family and guests arriving.
  • Schedule and conduct detailed inspections throughout projects & after each trade has completed its project tasks. Dealing with contractors, local vendors.
  • Review and approve invoices before sending to FO for processing. Process follow up if needed. Keep accurate household records and record petty cash expenditure.
  • Local errands and managing the household supplies. Ensure stocks of wine and other beverages are correctly stored.
  • Development of the household manual/ Database management and development (inventories etc).

Daily duties

Start at 06.30 hours when you will be expected to help the little girl get ready for school, prepare a snack and lunch box for her and take her to school, buying any items that you may need for your day or to assist the clients. 

4 days a week you are then free to go home until 16.00 hours, when you return to school to collect the child, prepare a healthy snack for her and if her parents are not home, keep a watchful eye on her.  You will prepare a salad, peel and chop vegetables etc. ready for the evening meal, which the clients prepare themselves.  At around 8pm the working day is over.

2 days a week, you return from school to clean the apartment, which the clients like to keep spotless and run to the standard of a luxury hotel.  The home is very minimalist and so this is a straightforward task for an experienced housekeeper.  Washing and ironing is also to be undertaken and it is important that you know how to care for fine fabrics, hand wash and care for general laundry.           

Clients are busy professionals who work full time and who are looking for an experienced and long-term housekeeper to run the home and care for it.  Their previous housekeeper of 15 years highly recommends this position.  The clients are very respectful and straightforward and just expect top class standard to be maintained in the home.
