A great opportunity for an experienced Private Chef to join a private family based at their villa in the South of France. The ideal candidate will possess exceptional skills in traditional Japanese cuisine along with proficiency in Italian, European, Vegetarian, and Russian culinary styles. This is a full-time position where you will work closely with another chef, ensuring the culinary desires of the family are met with finesse and creativity.

Key Responsibilities:

  • Create exquisite Japanese dishes as well as diverse cuisines including Italian, European, Vegetarian, and Russian, catering to the preferences and dietary requirements of the family.
  • Collaborate with the culinary team to plan menus, ensuring variety and innovation in meal offerings.
  • Maintain the highest standards of cleanliness and hygiene in the kitchen, adhering to food safety regulations.
  • Take charge of kitchen management duties such as shopping, provisioning, inventory management, and equipment maintenance.
  • Adapt swiftly to last-minute changes in schedule or meal preferences
  • Develop a deep understanding of the principal's culinary preferences, restrictions, and specifications.

Candidates must have extensive knowledge and expertise in traditional Japanese cuisine. Must be fluent in both French and English. 40+m MOTOR YACHT
Essential requirements: Previous private house or yacht experience, fluent in English, knowledge of diabetic menus and ingredients, STCW and onboard food hygiene certificate.

An exciting opportunity for an experienced chef to work in rotation with the head chef onboard a magnificent 40+m motor yacht based and cruising in the Mediterranean.

The Principals like all types of cuisines and are willing to try various foods within their dietary requirements. Organisation and excellent preparation skills are extremely important as each transition period should be seamless. Exceptional culinary skills with a passion for healthy cuisine and proficiency in preparing meals following a diabetic diet is essential.

You should possess a positive and easy-going attitude and the ability to work well within a close-knit team.

Duties will include but not be limited to:

  • Sourcing of all ingredients for meals, often without using an all-round supplier.
  • Preparation of menu plans to be discussed and approved by the principal or the permanent chef.
  • Daily preparation of breakfast, lunch and dinner for 2-8 guests.
  • Daily preparation of lunch and dinner for 9 crew.
  • Maintaining the cleanliness and hygiene of the galley and food storage areas on a daily basis. You will also ensure that at the end of each rotational period that everything is organised, labelled and dated for the incoming chef.
  • Accounting on spreadsheets which will be provided to the Captain at the end of every working period.

You will work during the months of May, July and September 2024 and will be off in the summer months - June and August 2024. There is a possibility to change the rotation length in the future and / or to make it a permanent rotation chef position. Start Date 1st May 2024. Negotiable salary depending on experience, plus travel and expenses to and from the yacht for each rotational period. MLC yacht contract and insurance provided. (HU4145)
