EXP CHALET MANAGEMENT COUPLE
CHEF / HOST / HOUSEKEEPER (Permanent position)
MERIBEL, FRANCE
Essential Requirements: Previous experience running and managing a Ski Chalet. Keen interest in business development, customer care and service. Hands on, proactive, forward thinking with good communication skills. Ideally conversational French, driver and child friendly. Computer literate.

The chalet is privately owned, catering for 15 persons with 8 ensuite bedrooms. The owners require a couple to oversee and assist with daily management of the chalet and its everyday running. This vacancy is a permanent position initially for a one year contract catering for both Summer and Winter seasons, with a view to renewing the contract annually.

During the Winter season, general tasks to be shared between the couple include:

  • Daily housekeeping, hoovering, dusting, cleaning bathrooms, making and changing beds.
  • Laundering of table linen, kitchen linens, towels (bedlinen is outsourced).
  • Lighting candles, making fires, bringing in logs.
  • Menu planning, food preparation for 3 course fine dining evening menus.
  • Shopping for, storing, preparing and cooking all meals (including children’s meals if visiting)
  • Serving continental breakfast
  • Preparing biscuits or cakes (on request)
  • Laying out, plating up and clearing all meals
  • Ensuring areas are child safe if children are visiting.
  • Supporting clients with requests ie activities, ski hire, passes, transport etc.
  • Liaising with the owners and clients.
  • Jacuzzi upkeep (training will be provided)
  • Clearing snow
  • Keeping inventories of chalet stock (wine, cleaning products, coffee capsules, linen etc.) and kitchen equipment
  • Carrying out weekly stock take and food shop according to a budget and guests requests
  • Maintaining and observing all hygiene, health and safety standards  
  • Occasional Instagram/Facebook posts
  • Administration (e.g. making Taxe de Séjour declarations and preparing client accounts at end of week
  • Organisation/supervision of agency cleaning staff, arranging local external cover for couples days off.
  • Generally making sure the client has a great stay and wishes to return.

During summer season, dependant on occupancy

Basic gardening, tidying, mowing, care of terrace & basic maintenance repairs of the chalet.
Marketing and taking reservations.
Writing basic blog posts.
Liaising with contractors, supervising and cost containment.

This a fantastic opportunity for an experienced high energy bilingual Chef based in Spain with travel around Europe and the Mediterranean. The family consists of a busy young self-made doting father who adores his family and wife. There are three children aged 7 -12 years old. The family is health conscious, works out, and is involved in many sports. They want to hire an outstanding modern chef who understands diet, nutrition, and healthy living—a regular Mediterranean diet during a typical week. The family entertains periodically. The ideal candidate will be relaxed, proactive, and capable of preparing simple family meals or creating an elaborate dinner party.

The ideal candidate will be tech-savvy and able to communicate clearly. Must be adaptable, a team player, fast on her/his feet, and energetic. The family is adventurous, travels extensively, and is very active - swimming, skiing, soccer, pretty much any sporting activity that one can think of the family is engaged in. (They love water sports and own two large yachts where they spend extended periods sailing the Mediterranean) The ideal chef will have prior experience working on yachts, be familiar with the Med, and well connected in the area.

The primary focus is ensuring the three children have meals throughout the day. The schedule is evolving, and a second chef will be hired to support the lead chef.

PRIVATE YACHT CHEF
MONACO WITH TRAVEL GSTAAD & LONDON
Essential Requirements: Well - presented, high attention to detail, patient and calm, well organized, English-speaking essential, French a plus. Minimum 5-year experience in a similar position.

An organised Chef is required for a private family on board their private yacht as well as in their home in Monaco and will be required to travel with the family. You should have impeccable attention to detail in both sourcing produce and cooking.
The yacht is used 7 months of the year with the principals being on board 4-5 months of the year. You will be cooking for the principals and a crew of 9 people. The candidate will take direction from the principal regarding how the food is to be prepared and on sourcing ingredients.

The style of food is preferred to be light Italian, Mediterranean, Greek, Spanish and French with the occasional Asian cuisine. It is important that the food is of the best quality, ingredients need to be prepared in an unaffected manner with attention to detail in the technique that they are prepared.
Produce is to be sourced from artisanal wholesome producers, and vegetables from market gardeners rather than suppliers at the markets.

You will need to adhere strictly to a very low carb diet for health reasons and there is a selection of vegetables which can and cannot be used. There is the occasional carb-based meal such as pasta but that is on special occasions. There are a few other dietary requirements and preference to products without nitrates and other additives.

Impeccable hygiene, non-smoker, accommodation provided on the yacht as well as when travelling. Salary in the region of 5,000 to 7,000 EUR. Seafarer qualifications required. This is a live-out position. (HU3913)

RESIDENTIAL PRIVATE CHEF
LIMERICK, IRELAND

An exciting opportunity for an experienced senior chef to be based at a Private Estate in County Limerick, Ireland. This is a fully staffed property which includes housekeepers, Estate Manager, butler, PA as well as another chef. The property is home to a HNW couple with grown children who visit regularly. The family do travel on occasion and thus we do require a chef with flexibility to travel mainly in Europe and Ireland when required.

We require a chef with previous private house experience, who has excellent knowledge of menu design and cooking from family style/casual dining to fine dining.  You should have a passion for fresh and seasonal produce and ingredients along with excellent attention to detail.

Duties will include:

  • Management of the kitchen
  • Planning schedules in advance to ensure chef cover is in place 7 days a week when the owners are in residence. This planning is in conjunction with the second chef.
  • Preparing and cooking beautifully presented family style meals with occasional fine-dining and private dinners / parties.
  • Extensive menu development, creation, and planning 
  • Meal related budget management and shop to replenish food stocks as required, maintaining expiration dates.
  • Always maintaining meticulous standards of hygiene 
  • Using fresh, high-quality produce sourced locally and internationally. 
  • In addition to food preparation for the family, preparation of lunch for 15 staff members (Monday to Friday) who work in the main residence and offices.
  • Discussing the daily menu with the Butler / Family in advance.
  • Arranging additional kitchen staff for larger dinner functions / parties
  • Driving family members if butler is unavailable.

We require a professional candidate with a friendly approach and excellent communication skills. You should have impeccable health & safety and hygiene knowledge.
