For privately owned 37 m luxury yacht, built by Benetti and delivered in 2017. She can accommodate up to 10 people with 5 staterooms and 6-7 crew members, including young dynamic Captain, Chief Engineer, Chief Stewardess, Stewardess, Chef, Nanny and 2 deckhands.

We are looking for a top class, mature and highly experienced Chef to work closely with the Captain and the Chief Stewardess, who can cater to the highest standards for the family. Italian/French and British dishes superbly presented and with a wide repertoire essential – if able to cook a few Japanese dishes it would be a plus. Fresh and seasonal produce required and a person looking for a long-term role is essential.

Currently in Monaco, the yacht cruises Greece, Turkey, Italy and the South of France.

Owners have a young Son of 2 and daughter of 5, so a child friendly, nutritionally competent person is essential. You will share a cabin with the nanny – although this is one of the twin staterooms and so rather exceptionally lovely accommodation. The owners live between their apartment in Monaco and on board the yacht with the principal working overseas for much of the year. As the accommodation is shared with the Nanny, we can consider only female candidates for this role.

PRIVATE CHEF

ESSENTIAL REQUIREMENTS: Previous private house experience, specialising in preparing traditional authentic Chinese cuisine, flexibility to travel.

We are seeking an experienced Private Chef with a prestigious background who specialises in authentic Chinese cuisine to cater to the culinary needs of family and their guests. The ideal candidate will possess a wealth of knowledge and expertise in crafting exquisite Chinese dishes, including Cantonese and Sichuan. You should, in particular have the experience of making different kinds of dough and Asian noodles from scratch while also demonstrating versatility in creating an international repertoire.

Candidates will be required to showcase exceptional skills in preparing and presenting traditional authentic Chinese cuisine, with a focus on quality and detail.

  • Develop and execute menus that reflect the tastes and preferences of the principals, incorporating a variety of Chinese regional cuisines as well as Thai, Japanese and Singaporean.

  • Create an international repertoire to cater to diverse culinary preferences, ensuring an exceptional dining experience for the principals and their guests.

  • Oversee all aspects of the kitchen operation, including menu planning, sourcing of ingredients, and provisioning, stock and fridge management. Develop relationships with various suppliers and vendors for procurement.

  • Manage the kitchen budget effectively, ensuring cost-efficient procurement of high-quality ingredients while maintaining exceptional culinary standards.

  • Maintain a clean, organised, and efficient kitchen environment, adhering to strict sanitation and safety standards.

  • Accommodate any dietary restrictions or preferences of the principals and their guests, ensuring personalised and tailored culinary experiences. Should also be knowledgeable on completing calorie counts on dishes and prepare healthy dishes as required.

We seek a candidate who will demonstrate flexibility and willingness to travel as required, accompanying the principals to various locations, and catering to their culinary needs. You should have exceptional organisational skills with the ability to manage the kitchen in its entirety, including budgeting, sourcing, and menu planning. Excellent communication and interpersonal skills, with the ability to cater to the specific culinary preferences and dietary needs of the principals and their guests. SEASONAL YACHT CHEF (ON MONTHLY ROTATION)
MAY, JULY, SEPTEMBER
40+m MOTOR YACHT
Essential requirements: Previous private house or yacht experience, fluent in English, knowledge of diabetic menus and ingredients, STCW and onboard food hygiene certificate.

An exciting opportunity for an experienced chef to work in rotation with the head chef onboard a magnificent 40+m motor yacht based and cruising in the Mediterranean.

The Principals like all types of cuisines and are willing to try various foods within their dietary requirements. Organisation and excellent preparation skills are extremely important as each transition period should be seamless. Exceptional culinary skills with a passion for healthy cuisine and proficiency in preparing meals following a diabetic diet is essential.

You should possess a positive and easy-going attitude and the ability to work well within a close-knit team.

Duties will include but not be limited to:

  • Sourcing of all ingredients for meals, often without using an all-round supplier.

  • Preparation of menu plans to be discussed and approved by the principal or the permanent chef.

  • Daily preparation of breakfast, lunch and dinner for 2-8 guests.

  • Daily preparation of lunch and dinner for 9 crew.

  • Maintaining the cleanliness and hygiene of the galley and food storage areas on a daily basis. You will also ensure that at the end of each rotational period that everything is organised, labelled and dated for the incoming chef.

  • Accounting on spreadsheets which will be provided to the Captain at the end of every working period.

You will work during the months of May, July and September 2024 and will be off in the summer months - June and August 2024. There is a possibility to change the rotation length in the future and / or to make it a permanent rotation chef position. Start Date 1st May 2024. Negotiable salary depending on experience, plus travel and expenses to and from the yacht for each rotational period. MLC yacht contract and insurance provided. (HU4145)
